The Thiers pocket knife, at the table and on the road
Le Thiers® is the pocket knife of the town of Thiers, France's cutlery capital. You know it by its double-wave outline, with no bee. Guy Vialis gives it his own reading: a hand-sharpened Sandvik 12C27 stainless steel blade, a guilloché spring (that is, engraved with decorative patterns along the back of the knife) and a handle in natural or composite material, chosen from around thirty options. Each knife is built to your hand: 11 or 12 cm handle; full handle, single bolster or two bolsters (the bolster is the steel cap that protects the end of the handle from knocks); with or without corkscrew; brushed or mirror-polished metal parts. Light, from 70 to 109 g depending on the build, it slips into a jacket pocket and comes out for a picnic, a bottle shared with friends, or as a gift meant to last. A Mediterranean wood with warm golden veins, valued for its sturdiness and timeless look; every scale has its own figure. Within the house, Le Thiers® by Guy Vialis is the only folding knife with the Le Thiers® outline: the Château LAGUIOLE® Signature and Grand Cru folding knives follow the Laguiole line and carry its forged bee. It shares its steel and most of its handle materials with the Le Thiers® by Guy Vialis table knife, so a pocket knife and a set of steak knives can be matched. It is also the most modular range in the house: two sizes, three builds, an optional corkscrew, two finishes and around thirty materials, 360 references in all. Guy Vialis, a sommelier and a winegrower's son, is the man who created the Château LAGUIOLE® sommelier knife in 1993; he was also a cutler known for his traditional knives and for the kitchen knives he made for starred chefs. He died in 2016 and gave his name to this brand, which now lives within Maison Château LAGUIOLE®, the umbrella brand created in 2021, in Thiers (Puy-de-Dôme, France). Le Thiers® by Guy Vialis knives are made in our workshop in Thiers, in keeping with the standards set by the Confrérie du Couteau de Thiers, and pay tribute to 600 years of Thiers cutlery.

Handcrafted in France — Each Guy Vialis is crafted in our workshop near Thiers, France, with exceptional expertise and a rigorous artisanal process.
Olive wood handle (Olea europaea), dark brown veining over a blond ground, a figure unique to each piece.
Olive (Olea europaea) grows around the Mediterranean, and its wood does not come from forestry: producing trees are not felled for timber, so the scales are cut from prunings, branches and orchard trees that have died or been uprooted. Olive grain is irregular, which is why the pattern of dark brown veining over a blond ground changes from one handle to the next.
Caring for this material
Wipe the handle after every use and never put the knife in a dishwasher: hot water and detergent open the grain and dull the polish. Once or twice a year, rub in a drop of neutral food-grade oil with a cloth, let it soak in, then wipe off the excess.

How to proceed?
- Scan the QR code on the back of the member card included in the box.
- Register your product by following the instructions on the dedicated page.
- Hand wash only, never in the dishwasher: a quick rinse under warm water, then wipe the blade, spring and handle dry at once with a soft cloth. Never leave to soak.
- Dry the knife with the blade open, then close it dry: moisture trapped between the liners damages the spring and the handle.
- Now and then, a drop of food-grade mineral oil on the blade pivot and on the spring keeps the action smooth; wipe off the excess.
- After use, rinse and dry the corkscrew worm; never use it as a lever.
- Do not use the blade as a screwdriver or a lever, and do not force the spring when closing.
- Store the knife closed, in a dry place. Care advice specific to the handle material is given in the material section of the page.
- An oily wood: wipe it dry after use; a drop of fine oil now and then keeps it from dulling.
To ensure the longevity, performance and elegance of your sommelier knife, please follow these care instructions:
- Hand wash only: this product is not dishwasher safe. Prolonged contact with water may damage materials and reduce durability. After each use, gently wipe your knife with a soft cloth. Do not immerse or soak in water.
- Protect from heat and moisture: avoid exposing your knife to intense heat, excessive humidity or harsh chemicals.
- Handle with care: protect the handle and mechanisms from impacts and drops, which could damage the blade or structure.
- Mechanism maintenance: if you notice slight resistance in the mechanism, apply a few drops of food-grade mineral oil to the moving parts. Professionals should lubricate every 2 weeks.
- Proper storage: after use, store your knife in a dry place, away from moisture, to preserve its performance and quality.
- What is the difference between a Le Thiers® knife and a Laguiole?
- Both are traditional French folding knives. The Laguiole is known by its slender silhouette and the bee on its spring. Le Thiers® is a collective trademark registered in 1994 by the Confrérie du Couteau de Thiers: a double-wave outline, no bee, and a knife made entirely in the Thiers basin. Both come out of our workshops in Thiers.
- Full handle, single bolster or two bolsters: which should I choose?
- The bolster is the steel cap at the end of the handle. The full handle, with no bolster, is the lightest (70 g in 11 cm) and lets the material run from end to end; a single bolster protects the front of the handle, where the blade pivots; two bolsters protect both ends and give the sturdiest and heaviest knife in the hand (95 g in 11 cm). The price follows the build; to date, the 12 cm handle costs the same as the 11 cm.
- Can it go in the dishwasher?
- No. The dishwasher attacks the handle (wood, horn, bone), washes the oil out of the pivot and can stain the steel. Hand wash and dry at once.
- Can I have it engraved, and how long does it take?
