The Thiers knife, at your table
Le Thiers® is the knife of the town of Thiers, France's cutlery capital. You know it by its double-wave outline, whose bevels are reversed at each end of the handle, and by the absence of a bee. It is a collective trademark registered with the INPI by the Confrérie du Couteau LE THIERS® in 1994, and its use is governed by a Jurande charter covering quality, traceability, professionalism and territory, with the prototype presented to the Jurande Council before manufacture (source lethiers.fr). Guy Vialis gives it his own reading for the table: an 11 cm hand-sharpened Sandvik 12C27 stainless steel blade on a 12 cm handle, 23 cm in all. Three builds, one knife. The full handle lets the material run from end to end and weighs 65 g. A single bolster, the stainless steel cap that covers one end of the handle and protects it from knocks, brings the knife to 97 g. Two bolsters, one at each end, bring it to 110 g and give it its most classic look. The metal parts come brushed, a matte satin, or mirror-polished. The handle is chosen from a palette of 27 materials announced in the catalogue: wood, horn, bone, carbon, stamina, PaperStone® and acrylic. Online that makes 109 pages, 37 handle versions and 31 base materials, from stamina to buffalo horn, from ebony to recycled PaperStone®. The knife is sold in a set of 2 or a set of 6, for an everyday table as much as for a gift. PaperStone® is a composite of recycled paper pressed with resin: dense, matte, warm in the hand, highly resistant to water and heat. Two families answer each other at the house's table. The Château LAGUIOLE® Heritage and Signature steak knives follow the Laguiole line, carry the forged bee, come only with two bolsters, are built in X46Cr13 stainless steel and are sold in sets of 2, 4 or 6, from 96 € per knife. The Le Thiers® steak knife by Guy Vialis follows the Thiers line, with no bee, in Sandvik 12C27 stainless steel, offers all three builds (full handle, single bolster, two bolsters) and starts at about 55 € per knife in a set of 2. It is therefore the most accessible steak knife in the house, and the only one that lets you choose the build. It shares its steel and most of its handle materials with the Le Thiers® folding knife by Guy Vialis: it is the only range that lets you match a table service and a pocket knife. Guy Vialis, a French sommelier, is the man who created the Château LAGUIOLE® sommelier knife in 1993; he was also a cutler known for his traditional knives and for the kitchen knives he made for starred chefs and leading restaurateurs. He died in 2016. His brand was taken over by LIGNE W, founded in 2008 by Sébastien Lézier, who bought Château LAGUIOLE at the end of 2017, and it now lives under the umbrella brand Maison Château LAGUIOLE®, created in 2021. The knives are made in our workshop in Thiers (Puy-de-Dôme, France), in keeping with the standards set by the Confrérie du Couteau de Thiers, and pay tribute to 600 years of Thiers cutlery.

Handcrafted in France — Each Guy Vialis is crafted in our workshop near Thiers, France, with exceptional expertise and a rigorous artisanal process.
Handle in PaperStone®, a recycled paper and resin composite, coloured through, matte finish.
PaperStone® is made of post-consumer recycled paper saturated with a phenolic resin stated to be petroleum free and derived in part from cashew nut shells, then hot compressed into a solid material. The handle is therefore paper turned dense and matte, warm under the hand rather than cold like stone, and offered here in grey, blue and black.
Caring for this material
Hand wash and wipe dry at once: the material is barely porous, but a long soak serves no purpose and the dishwasher is ruled out. If the matte surface dulls with use, a drop of food-grade mineral oil worked in with a soft cloth can restore its depth.

How to proceed?
- Scan the QR code on the back of the member card included in the box.
- Register your product by following the instructions on the dedicated page.
- Hand wash only, never in the dishwasher: heat and detergents attack wood, horn and bone, and dull the steel. Rinse in warm water, wipe dry at once with a soft cloth, never leave to soak.
- Wipe the knife as soon as the meal ends: salt, vinegar and acidic juices left on the blade pit the steel, stainless though it is.
- Do not rest the knife on a plate that is still hot, or near a heat source: horn and composite materials warp.
- Cut on a wooden or soft board: porcelain and stoneware take the edge off within a few meals.
- Store the knives dry, in their box or on a support that protects the edge; avoid the drawer where blades knock together.
- Care advice specific to the handle material is given in the material section of the page.

To ensure the longevity, performance and elegance of your sommelier knife, please follow these care instructions:
- Hand wash only: this product is not dishwasher safe. Prolonged contact with water may damage materials and reduce durability. After each use, gently wipe your knife with a soft cloth. Do not immerse or soak in water.
- Protect from heat and moisture: avoid exposing your knife to intense heat, excessive humidity or harsh chemicals.
- Handle with care: protect the handle and mechanisms from impacts and drops, which could damage the blade or structure.
- Mechanism maintenance: if you notice slight resistance in the mechanism, apply a few drops of food-grade mineral oil to the moving parts. Professionals should lubricate every 2 weeks.
- Proper storage: after use, store your knife in a dry place, away from moisture, to preserve its performance and quality.
- What is the difference between a Le Thiers® knife and a Laguiole?
- They are two distinct French knives. The Laguiole is known by its slender silhouette and its bee. Le Thiers® is a collective trademark registered with the INPI in 1994 by the Confrérie du Couteau LE THIERS®, with a double-wave outline and no bee, and its manufacture is governed by a Jurande charter (source lethiers.fr). Both come out of our workshop in Thiers.
- Full handle, single bolster or two bolsters: which should I choose?
- The bolster is the steel cap at one end of the handle. The full handle is the lightest (65 g) and the plainest, the material running from end to end. A single bolster (97 g) protects the front of the handle, on the blade side. Two bolsters (110 g) protect both ends and give the most classic look. The weights come from the MCL catalogue; expect about 10 € more per knife between one bolster and two.
- Can it go in the dishwasher?
- No. The dishwasher damages the handle first (wood, horn, bone) and dulls the steel. Hand wash and wipe dry at once. Damage caused by a dishwasher counts as poor care and is therefore not covered by the warranty, per the site's warranty policy.
- In what quantity is the knife sold?
- By the set, never singly. Two pack sizes are on the page: set of 2 and set of 6. Since 11/09/2026 the steak knife is no longer sold singly, at Guy Vialis as at Château LAGUIOLE, and the set of 2 is the first pack size on all three builds. The set of 2 costs twice the price of one knife, with no discount; the set of 6 is the best value per knife, 68 € each against 72 € in the set of 2, in black acrylic with a single bolster.
- Does it need sharpening, and how?
- Yes, like any knife that cuts. A steel is enough to true the edge after several meals; a whetstone brings the edge back once or twice a year depending on use. Sandvik 12C27 takes an edge again easily, which is one reason it was chosen.
- Can I have it engraved, and how long does it take?
