A flash of colour on a Grand Cru body

Château LAGUIOLE Edge starts from the Grand Cru sommelier corkscrew, the one the house builds for wine professionals, and adds a coloured spacer. The spacer is the thin piece set between the plate, the steel sheet that forms the body of the knife, and the handle. Tinted blue, red or yellow, it draws a crisp line along the full length of the handle. The contrast plays between that line of colour and a dark natural material, ebony or black buffalo horn. Everything else is Grand Cru: two bolsters, the metal pieces that close the handle at each end, a guilloché spring, meaning one decorated with an engraved pattern, and the forged bee, the house emblem. The range counts six versions, two materials and three colours: a service tool you recognise at first glance. Ebony is a dense wood of deep, matt black that leaves the coloured spacer to catch the light; the metal parts are brushed, in the same understated spirit. Each handle keeps the grain of its own piece of wood. Classic, Grand Cru and Edge share the same mechanism, the same Sandvik 12C27 stainless steel and the same closed length of 11.4 cm. The Classic, launched in 1993, carries a single bolster, weighs 90 g in the catalogue and comes in a wide palette of materials. The Grand Cru adds a second, wider bolster that strengthens the knife for intensive use, and moves to 100 g. The Edge is a Grand Cru with a coloured spacer: the same two-bolster body, the same stated weight, but a tighter palette, brushed ebony or mirror-polished black buffalo horn, and three colours to choose from. It is the version for those who want the professionals' knife with a detail that sets it apart on the table or at the belt. Château LAGUIOLE was born in 1993 on the initiative of Guy Vialis, a sommelier, with the first luxury sommelier knife. Each piece is made by hand in our workshop in Thiers, in the Puy-de-Dôme, the French capital of cutlery. After Guy Vialis passed away in 2016, the brand was taken over at the end of 2017 by LIGNE W, founded in 2008 by Sébastien Lézier; the three brands have formed Maison Château LAGUIOLE since 2021. The house is a partner of the Association de la Sommellerie Internationale (ASI) and of the Union de la Sommellerie Française (UDSF), and its Meilleur Sommelier du Monde collection bears the names of the ASI competition winners, from Shinya Tasaki (1995) to Raimonds Tomsons (2023). Every knife ships with its member card: its QR code certifies the piece is genuine and activates the lifetime warranty.

Handcrafted in France — Each Château LAGUIOLE is crafted in our workshop near Thiers, France, with exceptional expertise and a rigorous artisanal process.

Ebony wood handle, deep black, fine grained, polished without varnish.

Ebony is the heartwood of tropical Diospyros trees, close to 950 kilos per cubic metre, with a grain so fine that no pore remains visible once the surface is polished. Each handle keeps its own shade, from solid black to a faintly streaked brownish black, because no two ebony logs give exactly the same colour.

Caring for this material

No dishwasher and no soaking: wipe the handle with a soft cloth right after use, as ebony does not tolerate water sitting along the bolsters. Once or twice a year, work a drop of food grade mineral oil into the wood with a cloth to feed it and limit the hairline cracks caused by dry air or a heat source.

How to proceed?

  • Scan the QR code on the back of the member card included in the box.
  • Register your product by following the instructions on the dedicated page.
  • Hand wash only, never in the dishwasher: wipe dry at once with a soft cloth, never leave to soak.
  • If the mechanism stiffens, a drop of food-grade mineral oil on the pivots of the worm and the lever; every two weeks in professional use.
  • Keep the handle away from heat, prolonged damp and chemicals: ebony and horn are natural materials.
  • Protect from drops and knocks, which can mark the handle or misalign the lever.
  • Store dry, in its sheath, after use.

To ensure the longevity, performance and elegance of your sommelier knife, please follow these care instructions:

  • Hand wash only: this product is not dishwasher safe. Prolonged contact with water may damage materials and reduce durability. After each use, gently wipe your knife with a soft cloth. Do not immerse or soak in water.
  • Protect from heat and moisture: avoid exposing your knife to intense heat, excessive humidity or harsh chemicals.
  • Handle with care: protect the handle and mechanisms from impacts and drops, which could damage the blade or structure.
  • Mechanism maintenance: if you notice slight resistance in the mechanism, apply a few drops of food-grade mineral oil to the moving parts. Professionals should lubricate every 2 weeks.
  • Proper storage: after use, store your knife in a dry place, away from moisture, to preserve its performance and quality.

What is the difference between Edge, Grand Cru and Classic?
The Classic, launched in 1993, has a single bolster and weighs 90 g. The Grand Cru adds a second, wider bolster for the intensive use of professionals, and weighs 100 g. The Edge takes the Grand Cru as it is and adds a coloured spacer, blue, red or yellow, on an ebony or black buffalo horn handle.
Can it go in the dishwasher?
No. It is washed by hand and dried at once; prolonged contact with water damages the wood, the horn and the mechanism.
Can it be engraved?
Yes, personalisation is offered free of charge from the product page, in the 3D configurator.
Do ebony and horn vary from one piece to the next?
Yes. These variations are not defects.
How does the lifetime warranty work?
The gift box contains a member card with a QR code. Scan it and register the knife online: the lifetime warranty is then active, for the whole period of normal use of the product, subject to the conditions of care and use.
What is the delivery time?
