An exceptional French heritage

Château LAGUIOLE® Versailles is a sommelier knife whose handle is cut from woods of the gardens of the Château de Versailles, residence of King Louis XIV. These trees, planted in the 18th century during the garden renovation ordered by Louis XVI, were more than two centuries old when the storm of 26 December 1999 brought them down. Their wood lives on in these handles. The lever bears the fleur-de-lys, emblem of the Kingdom of France. The back of the knife is guilloché, that is, engraved with a decorative pattern, and the forged bee, the house signature, completes the piece. The knife comes with its blue leather sheath, its member card and its box. Four woods are offered: juniper, tulipwood, boxwood and yew. Each handle is cut from a single scale of wood: colour and grain vary from one knife to the next, and none is an exact copy of the photograph. Beneath the handle, the mechanism is that of the Château LAGUIOLE® Classic sommelier knife launched in 1993: one bolster in brushed stainless steel (the bolster is the steel cap at the end of the handle), a single liner (the liner is the steel plate that forms the body of the knife and carries the handle), a guilloché spring, body and lever in 12C27 stainless steel, the curved micro-serrated blade and the five-turn worm. What changes is what you see and what you can tell: a wood from the gardens of Versailles, the fleur-de-lys on the lever, a blue leather sheath instead of black, and the Versailles box. The Grand Cru adds a second, wider bolster for intensive use; the Versailles remains the slimmer one-bolster knife that gives first place to the wood and its story. Château LAGUIOLE® was born in 1993 on the initiative of Guy Vialis, a sommelier who wanted to turn a service tool into an object of art. The house has since worked with Best Sommeliers of the World, including Shinya Tasaki (1995) and Raimonds Tomsons (ASI 2023). After Guy Vialis passed away in 2016, Sébastien Lézier, founder of LIGNE W in 2008, took over the brand at the end of 2017; in 2021 it joined the umbrella brand Maison Château LAGUIOLE. Every knife is made and assembled in our workshop in Thiers, Puy-de-Dôme, the French capital of cutlery. The member card in the box attests that the piece comes from our workshops; its QR code lets you register it online and activates the lifetime warranty.

Handle in tulip tree wood (Liriodendron tulipifera) from the gardens of the Château de Versailles.

The tulip tree (Liriodendron tulipifera) was planted in the gardens of the Château de Versailles in the 18th century, and the wood of this handle comes from those gardens, after the storm of 26 December 1999. It is a cream to yellowish brown wood, sometimes streaked with grey or green depending on soil minerals, so the colour varies noticeably from one scale to the next.

Caring for this material

Tulip tree wood is soft and pale, it dents on impact and stains easily: wipe it at once, keep it away from coloured or acidic food, and never use a dishwasher. Its colour darkens in light over the years, which is normal ageing of the wood and not a flaw.

This product benefits from a lifetime warranty. The warranty is valid for the entire normal use period of the product, subject to compliance with the care and usage conditions defined in the warranty policy. To activate this warranty, you must register your product online.

How to proceed?

  • Scan the QR code on the back of the member card included in the box.
  • Register your product by following the instructions on the dedicated page.
  • Hand wash only, never in the dishwasher. Wipe immediately with a soft cloth, never leave to soak.
  • If the mechanism stiffens, a drop of food-grade mineral oil on the pivot is enough. For daily professional use, lubricate every 15 days.
  • Keep away from heat, prolonged humidity and chemicals.
  • Store dry, in its sheath, after use.
  • Wood is a living material: clean it dry, do not immerse it. See the advice specific to each wood.

To ensure the longevity, performance and elegance of your sommelier knife, please follow these care instructions:

  • Hand wash only: this product is not dishwasher safe. Prolonged contact with water may damage materials and reduce durability. After each use, gently wipe your knife with a soft cloth. Do not immerse or soak in water.
  • Protect from heat and moisture: avoid exposing your knife to intense heat, excessive humidity or harsh chemicals.
  • Handle with care: protect the handle and mechanisms from impacts and drops, which could damage the blade or structure.
  • Mechanism maintenance: if you notice slight resistance in the mechanism, apply a few drops of food-grade mineral oil to the moving parts. Professionals should lubricate every 2 weeks.
  • Proper storage: after use, store your knife in a dry place, away from moisture, to preserve its performance and quality.

What is the difference between the Versailles, the Classic and the Grand Cru?
The mechanism is the same as the Classic: one bolster, single liner, guilloché spring, 12C27 steel. The Versailles adds a wood from the gardens of the Château de Versailles, the fleur-de-lys on the lever, a blue leather sheath and its box. The Grand Cru carries two wider bolsters, designed for intensive use.
Where exactly does the wood of my knife come from?
From the gardens of the Château de Versailles: trees planted in the 18th century under Louis XVI and brought down by the storm of 26 December 1999.
Will my knife look exactly like the photograph?
No. Each handle is cut from a scale of natural wood: colour and grain vary from one piece to the next. That is what makes each knife unique.
Is it dishwasher safe?
No. Neither the wood nor the mechanism tolerates prolonged water or heat. Wiping it by hand after use is all it needs.
Can I have it engraved?
An engraved product cannot be returned or exchanged, as the law provides.
How does the lifetime warranty work?
Scan the QR code on the back of the member card included in the box and register your knife online. The card attests that the piece comes from our workshops; registration activates the lifetime warranty, under the house conditions of use and care.
