The Laguiole steak knife in a contemporary line, made in Thiers

The Château LAGUIOLE® Signature steak knife brings the house's contemporary line to the table: a tapered handle, gently rounded on the edges, that refines the emblematic curves of the Laguiole knife without erasing them. The grip is comfortable and secure; the silhouette, understated. Each knife is assembled in Thiers on two bolsters of X46Cr13 stainless steel, the same steel as the blade, and carries the forged bee, the emblem of Château LAGUIOLE®. A 10.6 cm blade, 22.1 cm overall, 85 g: a short, light steak knife for everyday meals and festive tables alike. It is sold as a set of 2 matching knives, also available in sets of 4 or 6, with a handle in one of twelve woods, black or blond buffalo horn, ram horn, buffalo bone, Stamina and PaperStone® in three colours each, or mosaic pavement acrylic. The material of this reference is presented just below. The most contemporary reference in the range. Signature or Heritage? Both Château LAGUIOLE® steak knives share the X46Cr13 steel, the two bolsters, the forged bee, the Thiers workshop and almost the same range of handles; their price follows the handle material, not the line. They differ in profile and size. Signature is the contemporary reading: a tapered handle with rounded edges, a pared-down design, a 10.6 cm blade, 22.1 cm overall, 85 g. Heritage keeps the traditional Laguiole silhouette as it settled in the early 19th century: a 12 cm blade, 23.5 cm overall, 103 g. The choice is a matter of style and size: Signature for an understated table and a shorter, lighter knife; Heritage for the classic shape and a longer blade. The Château LAGUIOLE® Signature folding knife carries the same line in pocket format. Château LAGUIOLE® was born in 1993, when the sommelier Guy Vialis created the Château LAGUIOLE® sommelier knife. The house is a partner of the Association de la Sommellerie Internationale (ASI) and of the Union de la Sommellerie Française, and issues sommelier knives in the names of the World's Best Sommeliers, from Shinya Tasaki (ASI 1995) to Raimonds Tomsons (ASI 2023). After Guy Vialis passed away in 2016, the brand was taken over at the end of 2017 by LIGNE W, founded in 2008 by Sébastien Lézier, then brought together in 2021 under the Maison Château LAGUIOLE® umbrella brand. The Signature steak knives come from the same workshop, in Thiers (Puy-de-Dôme), the French capital of cutlery: each blade is stamped Château LAGUIOLE®, each box holds the member card that activates the lifetime warranty, and the workshop provides the repair service.

Handcrafted in France — Each Château LAGUIOLE is crafted in our workshop near Thiers, France, with exceptional expertise and a rigorous artisanal process.

Handle in cast acrylic (PMMA), coloured through, polished.

The handle is cut from a block of cast acrylic, a resin coloured all the way through, whose pattern, plain, mosaic or inclusion, sits inside the block rather than on its surface. Because each block is cast and then sawn, the cut falls at a different point in the pattern every time, so no two handles from one block carry the same drawing.

Caring for this material

Hand wash in warm soapy water and wipe dry at once: acrylic is not harmed by water, but a dishwasher cycle dulls the polish. Use no solvent, no alcohol hand gel and no acetone or ammonia based cleaner, which make PMMA swell and craze, whereas a light scratch simply polishes out.

This product benefits from a lifetime warranty. The warranty is valid for the entire normal use period of the product, subject to compliance with the care and usage conditions defined in the warranty policy. To activate this warranty, you must register your product online.

How to proceed?

  • Scan the QR code on the back of the member card included in the box.
  • Register your product by following the instructions on the dedicated page.
  • Hand wash only, in warm water with mild soap; never in the dishwasher: heat, detergents and soaking damage the handle and dull the steel.
  • Do not soak; rinse and dry immediately with a soft cloth, blade and handle.
  • Wipe the blade after contact with acidic or salty foods (lemon, vinegar) rather than leaving it to sit.
  • Store dry, in the box or in a cutlery drawer with dividers, without the blades rubbing against each other.
  • Natural handles (horn, bone, wood): see the care note specific to the material on the handle line.
  • No special care beyond hand washing; avoid abrasive sponges and solvents, which scratch or dull the acrylic.

To ensure the longevity, performance and elegance of your sommelier knife, please follow these care instructions:

  • Hand wash only: this product is not dishwasher safe. Prolonged contact with water may damage materials and reduce durability. After each use, gently wipe your knife with a soft cloth. Do not immerse or soak in water.
  • Protect from heat and moisture: avoid exposing your knife to intense heat, excessive humidity or harsh chemicals.
  • Handle with care: protect the handle and mechanisms from impacts and drops, which could damage the blade or structure.
  • Mechanism maintenance: if you notice slight resistance in the mechanism, apply a few drops of food-grade mineral oil to the moving parts. Professionals should lubricate every 2 weeks.
  • Proper storage: after use, store your knife in a dry place, away from moisture, to preserve its performance and quality.

What is the difference between the Signature and Heritage steak knives?
Profile and size. Signature has a tapered handle with rounded edges, a 10.6 cm blade and weighs 85 g; Heritage keeps the traditional Laguiole silhouette, with a 12 cm blade and 103 g. Steel, bolsters, forged bee, workshop and price for a given material are the same.
Are they dishwasher safe?
No. Hand wash, no soaking, and dry immediately: heat and detergents damage natural handle materials and dull the steel. The lifetime warranty, activated with the member card, assumes these care instructions are followed.
Which steel is the blade, and what kind of edge?
Blade and bolsters are X46Cr13 stainless steel, a 13% chromium steel hardened to hold its edge and resist corrosion.
Set of 2, 4 or 6?
The set of 2 is the reference on this page; the packaging selector also offers the set of 4 and the set of 6, with their prices. The knives in a set are matched in the same material.
Is the engraving really free?
The Personalise button opens the house's 3D configurator. The first marking on each knife, text or logo, is offered; further markings are charged at a flat rate. A personalised product cannot be returned or exchanged (French Consumer Code, article L.221-28).
Will my set look exactly like the photo?
For horn, bone and wood, no: these are natural materials whose shade and grain vary from piece to piece; the two knives in a set are matched, never identical. Stamina, PaperStone® and acrylic are more uniform.
